Do you have your bar car ready????

This has been a week of things changing at a moments notice....

We had plans to get together with out of town friends last week but with the blizzard that didn't happen.

We were planning on getting together with them tomorrow night ...but more snow on the horizon.

We changed to tonight...good and bad as we still get to see each other...but I have a packed day that cannot be changed, an empty fridge and dinner to prepare....

So the scramble begins...

What to cook with minimal ingredients, short prep time but still delish???

Any suggestions...I lucked out with a brie cheese, with carmelized onions and apricot Jelly in puff pastry I froze because the recipe makes two....appetizers and drinks...check..

I am thinking some kind of pasta, veggy something or other with salad and fresh bread...

As long as the bar cart is ready you don't need much more...it is all about the company right.
